The owners of the Vine Street Pub have big plans – big plans and a lot of space – and they talked about both Tuesday at the restaurant’s second anniversary party.
First up is a plan for the former Harry’s Chop House next door to Vine Street, 1700 Vine Street, which Paul Nashak and Kevin Daly bought when they purchased the entirely building, which housed the former Milagro Taco Bar, which closed in 2007.
It could be a stand-alone space, a Belgian-style beer pub or simply part of Vine Street. But whatever happens could come as soon as this fall.
Then there’s the massive vacant space behind Vine Street, which Nashak and Daly, who also own the Mountain Sun and Southern Sun breweries in Boulder, plan to turn into a brewhouse for their eight best-selling beers (which make up 75 percent of their sales).

They got permission for the plan from the city last November, but have been waiting on their designer: Dick Doore, co-founder of the Left Hand Brewing Company in Longmont, who they call an engineering genious when it comes to breweries.
Still, build-out may take as long as eighteen months, Nashak says. But when it’s complete, the other two Mountain Sun locations will be able to focus on small-batch and experimental beers; the company brews a staggering 55 to 65 different beers a year and typically has twenty or so on tap at any one time.
