Pastry Skills covers the theory and technique of classic French pastry; you’ll learn essential baking formulas, recipe adjustments for high altitudes, garnishing and presentation, how to work with chocolate, intermediate cake decorating, candy-making and much more.

The classes run every Monday and Tuesday through April 20 from 9:30 a.m. to 3 p.m.; you should have already taken a Basic Pastry Techniques or Basic Cooking Techniques class if you want to keep up with the Pastry Skills folks.
