Protein Bar, the Chicago-based quick-casual, healthy-foods concept that opened its first location in Boulder early this year, then quickly added locations by Union Station and on South Colorado Boulevard, will open a fourth metro store before the end of the year, at 1600 Glenarm Street. See also: First Look at Protein Bar at One Union Station And apparently just in the nick of time, because the LoDo location, on the other edge of downtown, reports lines out the door most days.
Protein Bar has seventeen restaurants nationally, including the three already open in metro Denver. Founder Matt Matros opened his first restaurant in Chicago in May 2009, after shedding sixty pounds by following a high-protein diet; he created the eatery as a place where healthy food was accessible and affordable.
