If you’re going to open a restaurant, there’s likely no better place to do it than just steps away from a Trader Joe’s, which, as we all know, is unleashing four stores in Colorado next year, including one at Eighth Avenue and Colorado Boulevard, currently slated to open on Valentine’s Day. Sushi Harbor, a Japanese restaurant located at 4136 East Eighth Avenue, next door to Trader Joe’s, give or take a storefront, will open long before that if the flurry of construction going on inside is any indication. In fact, when I stopped in last week, a construction crew member seemed confident that it would open by the end of the year. Here’s an early peek at the space.
