These are not your average tamales. To the contrary, these tamales, the tender masa fragrant with sweet corn, and rolled with cheese, chiles, chicken or pork, are flat-out delicious, and they’re offered solo, by the half-dozen or dozen. You can get them smothered, too, with what has got to be the spiciest green chile I’ve found in a city obsessed with its verde.
