Jeremy Gobien went to school for ten years, got his Ph.D. in engineering from North Carolina State — and then decided to drop it all and brew beer in Colorado.
“I can’t wait,” says Gobien, who plans to open Copper Kettle Brewing this spring with his wife, Kristen Kozik. “We had both lived on the East Coast our entire lives. We were kind of beach bums as kids and young adults. But we wanted to try a different climate and a different mindset, and we’ve really fallen in love with the place.”
When it opens, Copper Kettle will feature four or five year-round beers — like a pale ale, a rye ale, a stout and a hefeweizen — along with four or five rotating seasonals. The tap room, which won’t serve food, will be modeled along the lines of those run by Dry Dock Brewing in Aurora and Strange Brewing near Invesco Field.
Located in a strip mall near the Denver/Aurora border, in unincorporated Arapahoe County, it will also be nearly equidistant from both of those places.

“We looked at the map and looked at the places that are making great beer in Denver and found a hole,” Gobien says. “We didn’t want to be on top of another brewery, and this is closer to where we live. There’s a lot of residential around us, a lot of neighborhoods. We’re not looking to be the next Odell. We want to stay small.”
In fact, Copper Kettle may be part of new wave of small breweries and tap rooms in Denver that become neighborhood hot spots rather than regional draws.
Gobien and Kozik hope to open sometime in April or May.
