Yesterday, I bumped into a local chef slurping oysters at a restaurant that sells thousands of them every month, and the platter of briny bivalves sitting in front of him, he gushed, where magnificent. In fact, he went on to say that all the oysters he’d seen over the past few weeks were “incredible,” which is good news for anyone who might be thinking of partaking in oysters this month as part of Jax Fish House‘s annual oyster celebration. All four Jax locations — Boulder, Denver, Fort Collins and Glendale — are serving various oyster-themed dishes during March, and ten cents of certain shucked oysters sold at all location will be donated to charitable partner Veterans Expeditions, a local non-profit that empowers veterans to overcome challenges associated with military service.
In addition, Jax is also collaborating with Post Brewing Company’s brewmaster Bryan Selders to create an exclusive Emersum oyster stout, now on tap now at all Jax outposts. And on Thursday, March 20, from 7 to 10 p.m., the Boulder Theater is playing host to Jax’s annual High West Oyster Fest, a homage to the “mighty mollusk” that pimps an oyster-eating (and shucking) contest, a feast of seafood, a cash bar, including the oyster stout, a DJ spinning tunes, a raffle and a silent auction. General admission tickets to the oyster fest are $25 each, or $75 for VIP tickets, both of which you can buy here…or you can win four GA tickets by answering a simple attendance question.
