What’s the buzz? A more casual version of Denver’s Beehive restaurant, which once occupied the address that’s now home to Table 6, is slated to open this June in downtown Boulder, in the former home of Saxy’s Cafe.
Beehive chef/owner Janice Henning, who lives in Boulder, bought the space at 2018 10th St. from Mike Mitchell, owner of Saxy’s, after the family-owned coffeeshop closed in February because of declining sales.
“It’s definitely bittersweet,” Mitchell says. “They were looking to move in and I was looking for a buyer if the opportunity came.”
For Henning, the story is much sweeter. She says she’s wanted to open another Beehive ever since she closed the original location. “When I had twins, it was a challenge to juggle it all,” she explains. “So I decided to sell it and the intention was always to get it back. That’s why I decided to keep the name.”

Although the name will be the same, the new Beehive will be more relaxed and family-friendly. “It’ll be a very casual neighborhood restaurant,” Henning says, noting that it will feature a large community table, self-order and take-out services at lunch, and sit-down — but still casual — service at brunch and dinner.
The restaurant’s design was inspired by Boulder’s eco-friendly tendencies. “For the interior we’re using all repurposed and salvaged materials, not anything brand-new. Just keeping everything nice and green,” she says. And the “farm-to-table” menu will follow suit, with everything healthy, fresh, local and organic whenever possible.
“I’m really excited, it’s a beautiful space,” Henning concludes. “It’ll be somewhere you can come to eat with family and friends.”
