Thomas d’Aquin, formally of Axios Estiatorio (winner of our Best Greek Restaurant in the Best of Denver 2012), is Volta’s executive chef; he promises Chef Surprise Tastings, featuring three- and six-course meals with wine pairings, every night at 5:30 p.m. The regular menu will feature such sophisticated, Greek-influenced dishes as rabbit sausage gnocchi, grilled octopus and grilled Colorado lamb chops.
Volta’s owners are Jon and Eleni Deering, a husband-and-wife team. Eleni is Greek and Jon has been part of the Boulder restaurant scene for years, working everywhere from Chautauqua Dining Hall to The Black Cat.
