The 1876 Restaurant at the Grand Hyatt downtown is revamping its menu this month. The new lineup will feature local, sustainable and organic ingredients whenever possible, in dishes that cater to special dietary needs; vegan and gluten-free options will be available.

The move to greener pastures is part of a new corporate initiative that Hyatt locations across the country will be embracing over the next year.

“It’s the right thing to do,” says Robert Kasnekaw, food and beverage director for the Grand Hyatt. “When you’re traveling, you’re pretty much a slave to what’s available to you. We want to provide healthy menu items while being responsible to the environment and taking care of local businesses.”
