The historic Flagstaff House, 1138 Flagstaff Road in Boulder, recently brought on sommelier Melanie Kaman to revamp its drink program — specifically its cocktail menu, which previously featured what the restaurant describes as “old-school classics.”

“Some of the new drinks are just cocktails we love that weren’t already on the menu, like Moscow Mule,” Kaman explains. “Others, like the Summer Spritz, are spin-offs of classics, and drinks like the Rocky Mountain Elderberry are our own versions of cocktails that are popular right now.”

Kaman incorporates as many organic and local ingredients as possible on the new menu, including spirits from Leopold Bros. and soda from Rocky Mountain Soda Company.

“The new cocktails have already been tremendously popular,” says Flagstaff GM Scott Monette. “We’ll be offering them as part of our Taste on the Terrace — special small plates and cocktails served on the terrace from 5 to 7 p.m. each evening while it’s warm out.”
