First: Lobster, apple and fennel vol au vent, paired with Vivanco Rose 2009.

Second: Quince ravioli, pear and pine-nut compote and herb salad, paired with Bodegas Ostatu Blanco 2009.

Third: Confit duck leg, roasted delicata squash stuffed with matsutake risotto and dried cherry Tempranillo sauce, paired with Palacios Remondo La Vendimia 2009.
