If you’re Fergie, and your 34th birthday lands on the 22nd show of the Black Eyed Peas E.N.D. world tour, which happens to be in Denver, how do you celebrate?
With a Bacardi V.I.Pea, which was served at the VIP after-party at Beta.
Bacardi, which is the sponsor of the tour, created the V.I.Pea at the start of the tour; it’s undergone a few smart tweaks since it was introduced a few months ago. Here’s the current version served — and served, and served — at Beta Saturday night:
BACARDI V.I.PEA
2 parts Bacardi Superior
1 part freshly squeezed lime juice
2 tsp Black Sugar (Fortnum & Mason)
1 dash egg white
Put all ingredients into a shaker, stir until the sugar has dissolved. Fill with cubed or crushed ice and shake vigorously until chilled. Double strain into a chilled or frozen coupette or cocktail glass.
Garnish with four dried black-eyed peas.
(For the record, the original recipe called for Domaine De Canton Ginger liqueur, lemon juice, simple syrup and a splash of ginger ale; the current V.I. Pea is a definite improvement.)
