As Denver’s downtown core begins to fill up with new and planned breweries, would-be tap room owners are looking to other neighborhoods around town.
The latest are the five partners behind Declaration Brewing, who have just purchased a building at 2030 South Cherokee Street, just off of Santa Fe Drive and Evans Avenue, where they plan to open a brewery with a huge outdoor beer garden in early 2014.

“There is a lot of exciting stuff already downtown, so it is easy to get lost in the mix with so many great breweries there,” says Mike Blandford of Declaration. “The area where we are is close to Washington Park and DU and the Platte River corridor. It has quick and easy access to everywhere, and it seemed like a good mix for us.”

Declaration will feature a 1,600-square-foot tap room with a 4,500-square-foot beer garden that will have a dedicated pad for food trucks, complete with a gate and utilities. There are also tentative plans for two garage doors that will open above the bar so that the bartenders can serve customers on the inside and outside at the same time.
“We really do anticipate a fun and social environment,” says Blandford, adding that they’re working on having live music at the brewery as well.
Blandford and his four partners are all associated with the Colorado School of Mines, either as graduates or as professors, and all five have engineering backgrounds.
None have commercial brewing experience, but they plan to make a wide variety of beer styles, including IPAs, sours and barrel-aged beers. “But for the most part, we want to maintain enough flexibility to let the public tell us what they like,” Blandford says.
